1. Main features:
Crispy shell: forms a golden crispy skin when fried/baked.
Adsorb oil: Reduce direct contact between food and high-temperature oil (but low-quality breadcrumbs may absorb too much oil).
Fixed shape: helps shape meat patties, meatballs, etc.
2. Difference from substitutes
Vs Flour: Bread crumbs have more pores and are more crispy; Flour is prone to forming hard shells.
Vs Starch: Starch is transparent and crispy after frying, while breadcrumbs are fluffy and crispy.
